Sizzling Steak Fajitas
Many parents avoid cooking red meat for their kids because they think it's unhealthy. But the truth is that lean cuts of red meat can have the same calories and fat as poultry and fish. Leaner cuts include round, sirloin, and flank steak and can often be cheaper than the fattier cuts at the supermarket. Choosing these lean versions of red meat will help you and your family avoid the saturated fat but still reap the benefits it has to offer such as iron and B vitamins.

For a food that's often high in calories, fat, carbs, and salt, these fajitas are healthy, while keeping the delicious flavors of a traditional recipe. Sizzling Steak Fajitas:
Ingredients:
Makes 2 servings
8 Ounces lean steak filet
Non-fat cooking spray
1 Red or green pepper (stemmed, seeded, sliced into 1/2 inch strips)
1 Medium onion (skinned and sliced into 1/2 inch strips)
1/2 Cup sliced mushrooms
2 Whole-wheat tortillas (I like La Tortilla Factory)
1/2 Cup shredded iceberg lettuce
Salsa as desired
4-6 Tablespoons reduced-fat shredded cheddar cheese
1/2 Cup nonfat Greek yogurt (as a sour cream substitute)
4 Tablespoons guacamole
Directions:
1. Heat a pan to medium-high heat and coat with cooking spray.
2. Slice steak into strips and saute until cooked through. Set steak aside.
3. Saute peppers, onions, and mushrooms in the same pan to desired tenderness.
4. Place half the steak, peppers, onions, and mushrooms on each tortilla, and put the lettuce, salsa, cheese, yogurt, and guacamole on top.
5. Roll up and enjoy!
