The holiday season is officially here! Unfortunately for many its what you may call a three-month long dieting disaster. But don't let the food, wine, and cold weather keep you away from your diet regime. You can have your turkey and eat it to! All you have to do is make some small changes to your large meal. Nicole Garfield, RD of The Pump Energy Food, gave us her four tips for lightening up your holiday dinner.
For Turkey: Remove skin after cooking to reduce saturated fat and cholesterol. White meat has less fat than dark meat so stick to that if you can.
For Potatoes: Instead of mashing potatoes with cream and butter, use low-sodium, fat-free chicken stock. It will yield creamy mashed potatoes that can be topped with a small dollop (1 tablespoon) of low-fat sour cream. Also, use red skin potatoes, leaving the skin on for added fiber and vitamins. This is great for your diet!
For Stuffing: Use toasted whole wheat bread or rolls instead of white bread to increase heart healthy fiber. Dried fruit (cranberries or raisins) are a great way to add flavor without fat.
For Dessert: Bake apples with the skin to boost nutrition content and add spice (cinnamon, nutmeg, cloves) for flavor instead of butter and other fats. Make one decadent dessert that can be accompanied with other healthy desserts - like fresh fruit.
